I love muffins! Why not make them a little healthier?! I like to make a dozen and freeze half of them so they last awhile. This recipe has been the best combo I have tried!!! They are SO good and having the extra protein makes them more filling so I stay full all morning.
Ingredients:
Bob's RedMill muffin mix
1 egg
1 banana
1 lemon
1/2 cup of oil
1 cup of milk of choice
1 tbsp vanilla extract
protein powders of your choice
blueberries
Directions:
Preheat oven to 400 degrees.
Add package of muffin mix to mixer.
Then, mix in the wet ingredients- egg, banana, oil, milk, vanilla extract, lemon juice.
Add the protein powders in and mix. I did two scoops of vanilla protein and two scoops of collagen.
Fold in the blueberries. They just need to be gently mixed in.
Pour batter into greased muffin tin and bake for 25 minutes or until tops are golden brown.
