I'm here for all the tacos, especially these breakfast tacos! Such an easy and so delicious breakfast that give you protein, veggies, and carbs aka PERFECT. Ingredients
Siete Taco Shells
2 eggs
Half a bell pepper
1 small tomato
Refried black beans/black bean dip
Avocado/Guacamole
Salsa
DF cheese
Avocado oil
Almond milk
Optional: hot sauce of choice
Directions
Start by preheating the oven to 350 for the taco shells.
Dice your bell pepper and tomato.
Add about 1/2 a tablespoon of oil to a skillet over medium-low and add the diced bell pepper. Season with S/P, garlic, and cumin.
While the bell peppers are cooking, prep the eggs. Crack both eggs into a bowl and add about 2 tablespoons of milk. Mix well. I have found using my hand mixer gets the eggs SO fluffy. You want a lot of bubbles when you're done.
Pour the eggs over the bell peppers. Check eggs regularly and push around/ flip them. When they start to solidify, add the tomatoes and cheese. Continue to flip/mix regularly.
Put taco shells into the over for 2 minutes and prep the remaining ingredients for assembly.
Once the eggs are about 99% of the way done (look mostly dry), turn off the stove and let them finish cooking in the pan.
When the shells are done, start with a small smear of the black beans at the bottom of the shell. Then, add your eggs/peppers mix, avocado/guac, then top with salsa and hot sauce.
