One of my favorite game day appetizers! A healthy twist on buffalo wings that everyone will love.
Ingredients:
-1 head of cauliflower
Breading:
-1 cup almond flour
-1 egg
-1 teaspoon of each: garlic powder, onion powder, paprika
-salt and pepper
-panko crumbs
Sauce:
-buffalo sauce of your choice (Frank’s or Pete’s or my favorite)
-1/4 cup melted butter
-more garlic and onion, salt and pepper
Directions:
Preheat oven to 375 F.
Rinse cauliflower head. Cut into pieces- try to follow where cauliflower branches apart because it keeps the ‘wing’ together more.
Mix all ingredients of the breading except the panko crumbs. Keep those in a separate bowl on the side. If the breading is too thick add a little water to thin it out.
Line baking tray with foil and grease the sheet. These stick very easily so make sure to grease well!
Create line-up: cauliflower, breading, panko, and use a wire rack to allow excess batter to drip off (I put parchment paper under to catch the drips for easy cleaning).
Dip each cauliflower into the breading and tap extra breading off. Just a light coat is perfect (if there is too much breading it doesn’t get crispy!). Then immediately dip into the panko crumbs and coat all sides. Lay onto greased sheet.
Bake for 10 minutes and flip the cauliflower. Bake additional 10 minutes.
While baking, mix the ingredients of the sauce.
After both sides have cooked, coat the cauliflower in the sauce. You can gently pour them into the sauce bowl and mix them to coat well.
Put cauliflower back onto baking sheet and bake 10 more minutes.
Let cool and enjoy!
