Cajun Grilled Tofu and Veggies

This was such a good combo and so quick and easy to make. With our grill it had to be done in a few rounds but even still its 30 minutes in the grill total! I also do not know why but grilled veggies are too easy to eat and just disappear. An easy veggie loaded dinner is always a good one in my book! Enjoy.


Ingredients

  • Half a block of tofu

  • 1 Bell pepper

  • 1 zucchini

  • 5-10 shishito peppers

  • 2+ ears of corn

  • Vegetable broth

  • Lemon juice

  • Soy sauce

  • Garlic, salt/pepper

  • Cajun seasoning

  • Avocado oil

Directions

  1. Preheat oven to max or about 610 degrees.

  2. Start pressing the tofu. Cut up the veggies into large chunks.

  3. Put the veggies- bell pepper, zucchini, and shishito, into a bowl and drizzle avocado oil to coat them. Add a dash of salt and about 2 teaspoons of pepper and garlic. Add about two shakes of paprika and a tablespoon of lemon juice. Mix well.

  4. Shuck corn and lightly coat with avocado oil and some salt/pepper.

  5. Start the tofu marinade- add tofu steaks into shallow dish and add half a tablespoon of oil, 1 tablespoon of soy sauce, add salt/pepper, garlic, and coat well with cajun seasoning. Pour enough vegetable stock to cover tofu.

  6. Add all the veggies, except shishitos, to the grill for 10 minutes. At the 5 minute mark, add the shishito peppers.

  7. When veggies are done, add tofu and grill for 10 minutes.

  8. Enjoy!
