Chili Lime Grilled Veggie Bowl

YUM. How I have never made this before now, I don't know. But it will for sure be in regular rotation for lunch from now on because WOW. This one is TOO good. Fun note, I was originally going to do it with black beans but realized as I started making it... didn't have black beans so I subbed in chickpeas. Great choice. You could also totally use black beans and it would be delicious still!


This bowl is seriously full of nutrients too and with chickpeas and quinoa it is loaded with protein! Aka it's the perfect lunch ;)


Ingredients:

  • 1 can of chickpeas

  • 1 ear of corn

  • 1/4 avocado

  • 1 head romaine lettuce

  • 1 bell pepper

  • Tomatoes

  • Quinoa

  • Avocado oil

  • 1 lime

  • Red onion

  • Garlic, cumin, chili lime seasoning

Directions:

  1. Start by getting the grill heated- with our Ninja I turn it to max which is 500 degrees.

  2. Prep the veggies for the grill- cut the bell pepper into large pieces and shuck the corn.

  3. Combine about 5 tablespoons of avocado oil with 1/2 teaspoon chili lime seasoning and coat the veggies with the mixture.

  4. Grill the veggies for 12 minutes flipping halfway through.

  5. Prep the remaining ingredients while the veggies are on the grill. Dice tomatoes and red onion and cut romaine and avocado. Rinse the chickpeas. Cook the quinoa- I found these precooked frozen pouches from Trader Joe's that make it SO convenient.

  6. When the grilled veggies are done cut the bell pepper into small pieces and cut the corn off the cob.

  7. Make the dressing: juice the lime, add about 2 tablespoons of avocado oil, 1/2 teaspoon of garlic, and 1/2 teaspoon of cumin. Mix.

  8. Assemble the bowl! Put it all together, pour the dressing over, and enjoy!!


**to help with juicing limes (or any citrus) roll it on the counter with the heel of your palm and add a little pressure.
