Chocolate Strawberry Cupcakes

What is life without a little sweet treat?! I have had a MAJOR sweet tooth my whole life. As a kid, I use to say there was a special place in my stomach reserved for sweets. I am not picky with my sweets either, any and all I love them. Sweets are that food I definitely have to keep my mind on balance or I would eat them all (PS it's okay if that happens occasionally too because we are HUMAN).


This is a super easy recipe that I decided to spice up a little. I use to LOVE Costco's strawberry filling in their cakes and finally tried to create my own version. And obviously, I have to make it a little healthier.


Ingredients:

Cake

  • Pamela's Vegan/ Gluten Free vanilla cake mix (or any vanilla cake mix you like)

  • 3 eggs

  • 1 tablespoon vanilla extract

  • Oil/water as directed on cake mix

Frosting

  • Miss Jones Vegan Chocolate frosting (or frosting of choice )

  • Strawberries

  • 3 tablespoons Honey

  • 1 tablespoon Chia Seeds


Directions:

  1. Preheat oven to 325 (or what your cake mix instructs).

  2. Get the filling setting. Put your strawberries in a bowl (a few big handfuls was plenty) and add honey/chia seeds. Put off to the side and let them sit while you make batter.

  3. Start your cake batter by adding eggs, oil, water, and vanilla and mixing. Add in dry mix gradually.

  4. Once batter is mixed, time to mash the strawberries. Quick tip: put them on a plate or other flat surface to mash. Add mashed berries to a bowl. Then add one big scoop of frosting and combine.

  5. Now ready to assemble! Add just enough batter to each cupcake at first just to cover the bottom about half an inch. Then, add a small scoop of the strawberry mixture to each cupcake. Finally, add another scoop of cake batter to completely cover the strawberry mixture.

  6. Bake for 21 minutes. To check, stick a toothpick or fork in and if it comes out clean they are ready. Just be aware of the strawberries inside ;)

  7. Let them cool completely and add frosting to the top! Enjoy!
