This might be one of my favorite dishes, like a finish the bowl every time kind of dish. I have to admit I am not one for measuring; cooking for me is about what feels right. But start with a little and add more is my motto. This dish is super easy especially if you have a rice cooker. I LOVE having a rice cooker it is a major game changer. Also, with my rice I add rice vinegar to give it a little more stick and deliciousness. The best part of this recipe is you can make so many adjustments to customize it to you! I normally use whatever veggies I have that week.
Ingredients:
Rice
White/brown rice
Rice vinegar
Add a small piece of Kombu for extra bonus (throw it out after cooking)
Veggie mix:
Avocado oil
1 can of chickpeas
2 bell peppers of different color
1 cucumber
1/2 an avocado
Shredded carrots
Half a purple onion
Garlic, salt, pepper
Sauce:
1 lime juiced
2 tablespoons of sesame oil
1 tablespoon of coconut aminos
¼ cup of soy sauce or tamari
1 tablespoon of honey
Garlic and ginger to taste
Directions
Start the rice. Add rice vinegar and kombu at beginning of cooking process. I add a quarter of a cup of rice vinegar per serving of rice I’m making. Just break a small (about 1 inch in length) piece of kombu off and throw it in!
Prep the veggies. Rinse the chickpeas until there is no more foam being produced. Dice the bell peppers, cucumber, and onion and mince the garlic.
Sauté the garlic and onion in avocado oil until the onion is soft and translucent. Then add the bell peppers and chickpeas. Cover and let sit for about 10 minutes on medium.
Combine the ingredients of the sauce. Start with 1 clove of garlic minced and 1 teaspoon of ginger.
Add most of sauce to the veggie mixture (leave a little to add right on top at the end). Lower heat and let simmer.
When the rice is done use a fork to “fluff” the rice (break it up and mix it around).
Serve! I love this meal is a nice big bowl. Start with rice then add the cooked veggies and add the diced cucumber, avocado, and shredded carrots (the cucumber and carrots are raw!). Use the remaining sauce to pour over and enjoy!
