Loaded Veggie Frittata

This is a great options that gives you almost your whole week of breakfast! Or you could freeze half and save it for another week too! I am always here for a recipe I cook once and enjoy at least 3 times LOL. This one gave me 4 servings so it passes the test ;). Plus, it's delicious, full of protein, and loaded with veggies!! You can pretty much add whatever veggies you prefer.


Ingredients:

  • 6 eggs

  • 1/4 cup of milk of your choice (I used almond)

  • Tomatoes

  • Spinach

  • Bell peppers

  • Garlic

  • Cumin

  • Salt/pepper

  • Avocado/salsa for topping

Directions:

  1. Preheat oven to 425 degrees F.

  2. Prep your veggies: dice bell peppers and tomatoes, I like to coarsely chop the spinach too.

  3. Crack your eggs into a bowl and add the milk. Add garlic, salt/pepper, and cumin. Beat until well combined- you want some of those little bubbles to start forming (makes it nice and fluffy).

  4. Use a round dish and grease it with butter/oil. Pour your egg mixture in and add those veggies in! I like to mix them around and make sure they are coated.

  5. Bake for 25-28 minutes. When you notice it has stopped bubbling, it is done!

  6. Top with avocado and salsa, enjoy!
