This is a super easy option for lunch to throw together during a busy day. Most ingredients are from Trader Joe's but you could definitely find similar options at a different store. This combo is a perfect base to get creative and try different variations too! Change up the seasonings and dressings for whatever mood you are feeling.
The base of the bowl is brown rice, roasted veggies, falafel, tomatoes, and dressing.
Ingredients:
Brown rice
Veggies to roast- carrots, sweet potatoes, purple potatoes, onions
Falafel (Trader Joe's frozen options is really good for quick options)
Tomatoes
Olive oil
Lemon juice
Tahini
Garlic, Coriander, Rosemary, Thyme
Salt/pepper
To make:
Preheat over to 400 degrees.
Add all veggies to a bowl and toss with olive oil, thyme, rosemary, garlic, and onion. Then, bake for about 20 minutes.
While the veggies are in the oven, prep the other ingredients. Cut up the tomatoes and heat the rice/falafel. (Having easy rice options is SO helpful- either batch cooking some at the beginning of the week or having quick cooking versions)
Time to make the dressing! Combine olive oil, lemon juice, tahini. garlic, coriander, rosemary, and salt/pepper. You can add more olive oil/lemon juice to thin it out to a consistency you like.
Put it all together and enjoy!
