Sesame Ginger Salmon with Balsamic Green Beans

Honestly, not sure if I like the salmon or green beans more. Both of these are some of my favorites!!! Throw them together and that is one delicious meal. Plus, the colors in this meal are seriously beautiful.


This meal really highlights the aspects I use when planing a meal- protein, veggie, carb, fat. Salmon is so good for you and I use to think I didn't like it. Thank goodness I am better at trying new foods now LOL. Only took 20+ years. It is an awesome source of protein and some good fats (omega-3 fatty acids). Then, green beans and tomatoes give me a good veggie combo and whole grain rice for carb source. Voila, beautiful and nutritious meal.


Ingredients

For salmon:

  • Salmon filets

  • Wasabi

  • Sesame oil

  • Sesame seeds

  • Ginger (can be powder or fresh)

  • Furikake (optional)


For Green Beans:

  • Green beans

  • Tomatoes

  • Oil (avocado, EVOO)

  • Basil

  • Garlic

  • Salt/pepper

  • Balsamic reduction

Directions:

  1. Preheat oven to 425 degrees F and heat grill to high (500 degrees). If you are making rice, start the rice now too.

  2. Rinse green beans and tomatoes. If need, trim green beans (I like to cut the ends off) and cut in halves. Dice tomatoes.

  3. Combine green beans and tomatoes in bowl and add seasonings- oil, basil, garlic, S/P. Drizzle balsamic reduction and mix to coat all the veggies.

  4. Bake for 20 mins.

  5. Once green beans go in, start seasoning your salmon. I use the wasabi as a tenderizer and rub that and ginger over the entire filet. Then, pour sesame over to lightly coat it. Top each side of the salmon with sesame seeds.

  6. Grill time will depend of size of salmon filets- small filets need 6-7 minutes; large filet start with 10 mins. You want it to kind of flake apart.

  7. Once salmon and veggies are done, plate them. Top salmon with a little more sesame oil and furikake or more sesame seeds. Enjoy!!
