2 good 2 handle. These are truly outrageous and so. good. Anyways, for these I am here for easy and delicious. Why re-invent the wheel?! SimpleMills has a phenomenal brownie mix that makes the base of this recipe and is perfect as is. Just a little (s)more fun to make it extra delicious 😜. Enjoy!
Ingredients
1 box of SimpleMills brownie mix
2 eggs
A Whole Lotta Butter (1/2 cup for the brownies, 1/4 cup for the crust)
3 tablespoons of water
Gluten free graham crackers/oats
Cinnamon
Marshmallows (I got a GF/DF option from Sprouts)
Directions
Preheat oven to 400 degrees.
Make mix following box directions. I add a handful of extra chocolate chips because why not.
Once the batter is finished, make the crust. Crush the graham crackers into crumbs and add 1/2 cup of oats and cinnamon. Melt the 1/4 cup of butter and pour on top of the crust. Mix it together to coat the crackers/oats in butter and cinnamon.
Pour the brownie mix over the crust and put in over. Bake for 20 minutes to start.
At the 20 minute mark, the brownies should be mostly done. The marshmallows will burn if there's too much time left for the brownies to cook. Cover the top of the brownies with marshmallows- keep it mind they will expand A LOT so you don't have to completely cover them. Leave a little room for them to grow.
Put them back into the over for 5-7 minutes. Using a toothpick, if you stick it into the center of the brownies it will come out mostly clean when they are done. If it looks wet still, put them in for a few more minutes and check again.
Let them cool and enjoy!
