Tofu Scramble

If you're tying to eat more plant-based/vegan this is is a must try breakfast! A protein heavy, savory, and easy vegan breakfast. Personally, 'scrambled' tofu is probably my favorite way to prepare it.


Ingredients

  • Tofu- extra firm is best

  • Oil

  • Onion

  • Bell pepper

  • Tomato

  • Spinach

  • Vegan cheese

  • Avocado

  • Garlic

  • Chicken-less seasoning

  • Chili seasoning

Directions

  1. Start by preparing the tofu- drain and press it. Let it sit while you start the veggies.

  2. Dice your onion, peppers, and tomatoes. I like to coarsely chop the spinach as well.

  3. Sautee the about a teaspoon of garlic, a small handful of onion, and about half a bell pepper. Let them sautee for about 5 minutes.

  4. Cut the tofu in half and put half aside (you don't need it). Using your hands, crumble the tofu into small bits into the pan with onions and pepper.

  5. Add the seasoning- when cooking with tofu you want to go a little heavier with seasoning because you are building the flavor from the ground up. You want these seasonings to give the tofu some color too. Start with a teaspoon of the chicken-less and about a half a teaspoon of the chili. Mix well.

  6. Add the tomatoes, spinach, and vegan cheese. Let it sit on low for 5-10 minutes depending on how long your cheese takes to melt. While you wait, slice a quarter of an avocado to top.

  7. Serve with fruit and potatoes, enjoy!
